It's well known that coffee can stimulate us, but in some cases, it can also have the power to change lives. Marc-Antoine Paquin and his wife Marie-Hélène Choquette were based in Montreal for a few years to live closer to their families. Marc-Antoine worked in engineering, but as time passed, he felt a growing emptiness inside that couldn't be filled. Then, health problems forced him to question his career.
The duo's passion for coffee began in 2012 after they visited independent coffee shops in Montreal, and during various trips to New York, San Francisco and Portland, where the coffee culture is strong. "That's when I really got the bug. I soaked up everything I could in my reading, and I also went to be trained in New York," says Marc-Antoine.
They decided to combine their expertise and open their own business in order to bring people together. After developing a well-researched business plan, they put everything on the line, bought a venue on the Plateau and opened Noble Café on August 19, 2015.
