These small oysters are grown in floating trays. Always petite and clean flavored with black and white shells, a delightful yeasty aroma of champagne or rising bread dough. A great starter oyster.
Village Bay Richibucto, NB.
Cultivated using the most modern floating system available. This system, in combination with the cold, clean, rich waters of the Baie de Bedec has resulted in an oyster unsurpassed in its flavor, texture and meat yield.
Sober Island Sheet Harbour, NS.
These are grown using a surface floating/submersible system to allow a constant nutrient supply in a lake off Sheet Harbour. The wave action on the surface creates natural shell shaping thus producing a choice oyster. This year they are very briny, and for a smaller sized oyster, pack a lot of flavour.
Malpeque Malpeque, P.E.I.
Transitional oyster that is bigger and bolder than Beausoleil. Light bodied and clean finish. They have a perfect balance between sweetness and brine.
Ruisseau Yarmouth, NS.
This plump oyster is more flavourful than a Beausoleil and boasts some of the meatiest of our oysters, sometimes available in Jumbo size.
North Nova Pictou, NS
Deep cup, quite briny but they are very light in bodya quintessential Maritime oyster.
Rocky Bay Salutation Cove, P.E.I.
Left to grow on the ocean floor, these oysters have deep cups and a brighter, more briny flavour. They are very salty with a sweet, crisp finish.
Pristine Bay Antigonish, N.S.
Wonderful, deep cup, very juicy. Lots of salinity and flavour. Jumbos sometimes available.
Black Point Pictou, N.S.
Grown in shallow waters, have very salty taste with a sweet after taste. Good medium body.

The Waterfront Warehouse actually occupies an entire warehouse. As such, it's cavernous, with a long bar on one side, upside down dinghies hanging from the ceiling and plenty of comfy booths available. Seeing as you're in Nova Scotia, get the bacon-wrapped Digby scallops – bacon saltiness with scallop chewiness is heavenly. When you really want to go for it, try the Warehouse Seafood Tower, which consists of lobster, oysters, shrimp and crab! Also, the staff are total sweethearts.
View this Smart ListPhysically, the Waterfront Warehouse is exactly what the name says: It's a big old warehouse overlooking the harbour boardwalk, just south of the Maritime Museum. During the warm months of the year, it also boasts the largest patio on the waterfront. The oyster selection here also covers all three Maritime provinces, with lesser-known varieties, such as Nova Scotia's Ruisseau and PEI's Rocky Bay keeping company with the iconic Malpeques and Beausoleils.
