But, we also wanted to do old rural Alberta,” says executive chef Ryan Blackwell. It turns out the two food philosophies are deliciously compatible.
The restaurant features a sleek red-and-black interior reminiscent of New York diners, and its rustic touches are a nod to its Alberta roots. The restaurant’s open kitchen is located right smack-dab in the middle of the restaurant, so customers can watch red-bandana-clad chefs prepare their meals. “When the room is full, it’s such a great room to be in,” says Ryan. In the evening, the restaurant becomes a hub for young urbanites and Calgarians seeking an upscale-casual night out-on-the-town.
This trendy 17th Avenue bar gives fans of fusion food a reason to rejoice during this year's Poutine Week. On the menu at Roosevelt is a Korean bibimbap-inspired poutine that’s perfect for spice-lovers who are looking for something a little different. With house-cut fries that are topped off with a fried egg, Korean beef, spicy gochujang gravy and mozzarella, all that’s missing is a side of kimchi.
