A cross between a breakfast sorbet and a thick drink, this refreshing, virtually fat-free start to the day takes just seconds to whip up. Here's how:

Whip up a cool fruit slush with this quick recipe

Ingredients

  • 8 ice cubes
  • 250 g (1/2 lb) hulled strawberries, frozen
  • 250 g (1 c) fresh pineapple chunks, frozen
  • 125 ml (1/2 c) pineapple juice
  • 30 ml (2 tbsp) skim milk powder
  • 15 ml (1 tbsp) sugar, or to taste
  • Sprigs of fresh mint for garnish

Directions

Preparation time: 5 to 15 minutes, plus 1 1/2 hours. Serves 4.

  1. Put the ice cubes in a food processor or heavy-duty blender and process until they're finely crushed. Alternatively, crush the ice cubes in a freezer-proof bag, using a rolling pin, and put them in the processor or blender.
  2. Add the strawberries, pineapple chunks, pineapple juice and milk powder. Process again until blended, but still with small pieces of fruit and ice visible.
  3. Taste and sweeten with sugar, if necessary. The amount of sugar required will depend on the sweetness of the fruit. Process briefly, using the pulse button.
  4. Spoon into tall glasses. Decorate each with a sprig of mint and serve with long spoons.

Mix it up

  • If the recipe makes more than you need, freeze it in ice cube trays. You can just puree the cubes in a food processor or blender for an instant slush. Add fruit juice to dilute, if necessary.
  • For a summer fruit slush, use a 250-gram (1/2-pound) bag of frozen mixed summer fruit. Add 60 millilitres (4 tablespoons) unsweetened orange juice and 30 millilitres (2 tablespoons) skim milk powder and process. Sweeten with a little sugar to taste.
  • You can also try a more tropical slush. Use 2 mangoes, pitted, chopped and frozen, and 1 fresh banana. Add 60 millilitres (4 tablespoons) each light coconut milk and unsweetened orange juice.
