Apple and cheddar cheese soup

People commonly pair apples and cheddar cheese in apple pie, but they also go together well in a soup!

  1. Cook a chopped onion and carrot in three tablespoons of butter at the bottom of a soup pot. Add half a cup of flour to the pot to thicken the mixture.
  2. Next, add four cups of chicken broth and a large diced apple, then bring to a boil and reduce. Let the mixture simmer for 15 minutes, then stir in a cup of apple juice and two cups of shredded cheddar cheese. Let the cheese melt and stir.
  3. To make the soup silky smooth, put it in a blender until it's a fine puree, then serve.

Butternut squash and apple soup

Two autumnal flavours that mix well in a soup are butternut squash and apples.

  1. Chop an onion, celery rib, and large carrot into small pieces, then cook it in a tablespoon of butter at the bottom of a soup pan. Chop, peel and seed a butternut squash and add it to the mix, along with three cups of chicken broth, a chopped green apple, and a cup of water.
  2. Bring the mixture to a boil and stir, then reduce to a simmer and cover for 30 minutes.
  3. Once the fruits and veggies are soft, put them in a blender and puree. You can then finish the soup with your choice of seasonings and a dollop of sour cream.

Carrot and apple soup

Carrot soup is another easy one to make for the fall, and adding apples only enhances the sweet flavour of the carrots.

  1. Grate a tablespoon of ginger, then chop an onion, a pound of carrots, and three Granny Smith apples before cooking the produce in butter in the bottom of a soup pot. Add four cups of vegetable broth with two teaspoons of honey and the juice of a lime.
  2. Bring the mixture to a boil, reduce, cover, and simmer for about 15 minutes.
  3. When everything is finished, puree in a blender and serve. You can add salt and pepper to taste.

Broccoli soup with apple

For something a little different, try cooking broccoli soup with apple.

  1. Take a large head of broccoli and chop it. Include the stems, but peel them with a vegetable peeler first, then chop them into tiny pieces.
  2. Cook a diced onion and green apple in two tablespoons of butter at the bottom of a soup pot. Add three cups of chicken broth, broccoli pieces, and a cup of apple cider to the pot. Bring to a boil, then cover and allow to simmer for about 30 minutes.
  3. Puree your soup in a blender, add salt and pepper to taste, then serve with a garnish of sour cream, walnuts or chopped green onions.

As you can tell by the directions, these recipes are all very similar. That means that it's easy to get creative. Use these instructions as a base, but try substituting your own unique ingredients and flavours. You'll be a soup master in no time.
