Homemade cocoa like Mom used to make

On a cold, blustery day, there's nothing quite like cocoa made the good, old-fashioned way. Follow this recipe and no matter how cold it gets out there, you'll warm up in no time.

For an even more intense chocolate flavour, reduce the amount of milk and increase the water. You can also use a little heavy cream instead of the milk; mix it with the sugar and cocoa to make a paste then pour boiling water gradually, while stirring, onto the mixture.

Makes one serving

  • 30 ml (2 tbsp) sugar
  • 15 ml (1 tbsp) unsweetened cocoa
  • 50 ml (1/4 c) water
  • 175 ml (3/4 c) 1% milk
  • Miniature marshmallows (optional)
  • 1 cinnamon stick, 10 cm (4 in) long (optional)
  1. In a small pot, combine the sugar and cocoa. Add the water. Over moderate heat, bring the mixture to a boil, stirring constantly until the sugar has dissolved. Lower the heat and simmer two minutes, whisking constantly.
  2. Stir in the milk. Increase the heat to moderate and cook until the cocoa is heated through; do not allow the mixture to boil.
  3. To serve, pour the cocoa into a mug or cup. If desired, top with several marshmallows and use the cinnamon stick as a stirrer.

Decadent-tasting hot chocolate Viennese

Chocolate, coffee and hot milk — triple yum! This is a classic coffeehouse treat that you can enjoy for much less at home.

Makes four servings

  • 75 g (1/3 c) unsweetened cocoa powder
  • 75 g (1/3 c) sugar
  • 600 ml (2 1/2 c) milk
  • 375 ml (1 1/2 c) freshly brewed strong coffee or espresso
  1. In a medium pot, combine the cocoa powder and sugar, pressing out any lumps. Stirring constantly, pour in enough of the milk to moisten the dry mixture, about 125 millilitres (1/2 cup); whisk in the coffee and the remaining 500 millilitres (two cups) milk.
  2. Over moderately low heat, cook, stirring occasionally, until the mixture steams but does not boil, eight to 10 minutes.
  3. Pour the hot chocolate into mugs or coffee cups and serve.
