Tender-cooked lamb chops

A farmhouse breakfast based on lamb chops is guaranteed to provide sufficient fuel to carry the hardest working farmer through the day. The tender-cooked lamb chops are combined with poached eggs and dry-fried tomatoes cooked with bacon and onions. If you prefer a lighter meal, opt for the dry-fried tomatoes on toast topped with a poached egg and freshly ground pepper.

Ingredients:

  • 4 lamb chops
  • 250 to 500 ml (1 to 2 c) lemon juice
  • 1 garlic clove, crushed (optional)
  • Freshly ground black pepper

Method:

  • Rub the lemon juice, garlic and pepper onto chops.
  • Arrange on a rack in an oven dish and place in a moderate oven (180°C to 190°C/350°F to 375°F) until desired doneness.

Dry-fried tomatoes with bacon and onions

Another hearty meal before a long day of work, this is a staple in many Australian diets. Canned tomatoes may be substituted for fresh; add two to three sun-dried tomatoes to them to give a full, rich tomato flavour.

Ingredients:

  • 1 onion, sliced
  • 2 slices bacon, chopped
  • Olive oil
  • 6 to 8 peeled, ripe tomatoes
  • Freshly ground black pepper
  • Basil leaves

Method:

  • Fry the onion with the bacon and oil in a heavy-based frying pan for two to three minutes.
  • Add chopped tomatoes and cook over a moderate to low heat until the liquid evaporates.
  • Top up with 30 to 45 millilitres (two or three tablespoons) of water and dry-fry again, repeating this process several times to caramelize the sugars in the tomatoes for a rich, full flavour.
  • Sprinkle with pepper and basil leaves.
  • Serve on toast with a poached fresh egg.

Poached egg

Poaching eggs is a simple process when using fresh farm eggs (old eggs will not hold their shape).

Method:

  • Bring half a small pot of water to the boil, add a dash of vinegar and then move the pot to a lower heat on the stovetop.
  • Break the egg into a cup and carefully pour it into the simmering water.
  • Gently stir or swirl the water occasionally.
  • Cook for two to three minutes until the egg has become firm on the outside and is soft in the middle.
