One of the most delicious comfort foods that people can make are barbecued ribs. Though they can be difficult to barbecue, here are four tips to get your barbecued ribs tasting great.

1. Use a rub

Rather than marinating ribs or slathering them in sauce before cooking them, try rubbing them with a mixture of spices. You can find many recipes for delicious barbecue rubs containing ingredients like brown sugar, chili powder, garlic powder and (of course) salt and pepper.

  • Try to make a combination of herbs and spice that suits your personal taste, then use your hands to massage the mixture over the entire surface of the meat before cooking.
  • You can add sauce to the ribs just before serving, which will keep them from getting too sticky or sweet. Well-prepared ribs don't always need sauce to taste delicious.

2. Low and slow

Instead of grilling ribs over high flames, choose to cook them over a lower heat.

  • Try to create a cool spot on your grill by heating coals on one side and cooking the ribs on the other side, away from the direct heat. It will, of course, take longer to cook the ribs, but it will be worth the wait for ribs that are even more tender and juicy.

3. Remove the skin

Whatever you do, don't forget to remove the thin skin on the back of the ribs before cooking. You don't want to leave the skin on because it makes the meat chewy and tough.

  • Use your hands to grip the skin at one end and peel it completely off. You can get a better grip on the rib skin by using a dry paper towel for traction, as it can be too slippery to use your hands.

4. Use wood chips

Many people choose to grill ribs over charcoal, but you can add more flavour by cooking them with wood chips over a fire.

  • To use wood chips, soak apple, peach, or mesquite chips in water for about an hour before grilling your meat, then add them to the grill with the meat.
  • When you cook with the lid of the grill closed, the wonderful aromas from the wood smoke will gather in the grill and flavour your meat.
