2 easy-to-make, simply-delicious potato recipes

Potatoes are one of the foods that can be eaten for lunch and dinner, or at a summer barbecue. Here are two recipes to get you started.

2 easy-to-make, simply-delicious potato recipes

1. Sweet Potato Casserole

Unlike the familiar marshmallow topping, apples make a substantial nutritional contribution to a sweet-potato casserole, which abounds in vitamin C from the sweet potatoes, apples, onion and lemon juice, plus B6 from the sweet potatoes.

Preparation time: 20 minutes
Cooking time: 45 minutes
Serves: 4

Ingredients:

  • 15 ml (1 tbsp) unsalted butter
  • 1 onion, finely chopped
  • 1 kg (2 lb) sweet potatoes, peeled and thinly sliced
  • 2 McIntosh apples, cut into 1 cm (1⁄2 in) thick wedges
  • 45 ml (3 tbsp) sugar
  • 30 ml (2 tbsp) lemon juice
  • 175 ml (3⁄4 c) chicken broth
  • 2 ml (1⁄2 tsp) salt
  • 1 ml (1⁄4 tsp) pepper

Instructions:

  1. Preheat oven to 230ºC (450°F).
  2. In very large nonstick skillet, heat butter over moderate heat. Add onion and sauté five minutes or until tender.
  3. Add sweet potatoes, apples, 30 ml (2 tbsp) sugar and lemon juice, and cook until sugar has melted. Add broth, salt, and pepper, and bring to boil.
  4. Transfer mixture to 18 cm x 28 cm (7 in x 11 in) glass baking dish. Cover with foil and bake for 25 minutes or until sweet potatoes are tender.
  5. Uncover, sprinkle with remaining 15 ml (1 tsp) sugar, and bake 10 minutes or until lightly browned.

Calories: 350, fat: 4 g, saturated fat: 2 g, sodium: 290 mg, carbohydrate: 76 g, protein: 5 g.

2. Roasted New Potatoes

New potatoes, full of vitamins C and B6, appear in the late spring or early summer. Easy to prepare – and simply delicious! Enjoy!

Preparation time: 10 minutes
Cooking time: 45 minutes
Serves: 8

Ingredients: 

  • 750 g (1 1⁄2 lb) small new potatoes, scrubbed
  • 3 cloves garlic, thinly sliced
  • 30 ml (2 tbsp) olive or canola oil
  • 2 ml (1⁄2 tsp) crumbled rosemary

Instructions:

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, combine potatoes with garlic, oil and rosemary.
  3. Transfer to roasting pan, arranging in one layer, and roast 45 minutes or until golden and cooked through.

Calories: 219, fat: 8 g, saturated fat: 1 g, sodium: 16 mg, carbohydrate: 35 g, protein: 3 g.
