Meet the owner

Who would have thought the unlikely combination of Belgian waffles and Southern-fried chicken would become a lunchtime craze in Calgary? Peter Ivanov, owner of the Waffles & Chix wasn’t sure the city would take to it when he rolled out his food truck in 2012.

Taking a break after serving a hungry, lunch crowd outside a corporate head office in the city's northeast, Peter recalls the truck’s inaugural flight. “I was researching food trucks for awhile," he says. "Fried chicken and waffles was the riskiest choice at that time because pretty much nobody in Calgary did that food.” The first event he attended was a three-day store liquidation. The city's best and busiest food trucks were set up in the parking lot. Hoping for a slow start to ease into his new, mobile food operation, the opposite happened. “We just got slammed,” he says with a laugh.

It hasn’t slowed since. Those not lucky enough to be on one of Waffles & Chix’s many weekday lunchtime stops (such as the Foothills Hospital, University of Calgary and Stantec Engineering), or who can’t wait to visit this waffle wagon at one of Calgary's summer festivals, can now eat at the Waffles & Chix indoor food kiosk in the Crossroads Market food court. Open daily, Peter and his wife Iva launched this location in 2015.
