Fresh corn on the cob has to be one of the best signature foods of summer. Buy it fresh, and add these toppings to make grilled corn taste out of this world.

Beyond just butter and salt

Melted butter and salt are sublime when slathered on an ear of corn, but trying some different toppings will take this summer staple up a few notches.

Grilling the corn

  • For all of the following recipes, grill the corn in the husk for about 20 minutes and remove from the grill.
  • Pull down the husk and brush on a flavoured topping.
  • For some of the recipes you'll need to put the corn back on the grill for another 5 minutes until it is nicely browned.

1. Smoky Lime Grilled Corn

Stir together:

  • 2 sticks of softened butter
  • The juice from 2 limes
  • 1 teaspoon salt
  • 4 tablespoons of minced parsley or cilantro
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt.
  • Coat the corn and continue grilling.

2. Chutney Grilled Corn

  • Mix fresh fruit chutney (to taste) into 2 sticks of melted butter for a sweet topping.

3. Holy Guacamole! Grilled Corn

  • Spread mashed avocado on the corn cob and then sprinkle with lime juice and salt.

4. Parmesan and Basil Grilled Corn

  • Brush the grilled corn with melted butter.
  • Sprinkle with minced fresh basil and freshly grated Parmesan cheese.

5. Mexican Grilled Corn

  • Mix together 5 teaspoons cumin and 5 tablespoons mayonnaise.
  • Spread the mixture on grilled ears of corn and then roll them in Cojita cheese crumbles.
  • Sprinkle each ear of corn with 1 tablespoon of chopped fresh cilantro before serving.

6. Asian Grilled Corn

Mix together:

  • 1/2 cup honey
  • 1/2 cup hoisin sauce
  • 4 tablespoons freshly squeezed lime juice
  • 4 tablespoons soy sauce
  • 4 teaspoons toasted sesame seeds
  • 1 minced Serrano chile
  • 4 sliced green onions.

Season the corn with the mix and finish grilling.

7. Italian Grilled Corn

  • Mix together 1 cup of grated Parmesan cheese, 4 minced garlic cloves and 1/2 cup chopped parsley.
  • Roll the grilled corn in the mixture and return to the grill for another 5 minutes.

8. Grilled Corn with Hot Sauce

Beat together:

  • A cup of butter
  • 2 teaspoons of hot sauce
  • 6 tablespoons India Pale Ale beer
  • 1/2 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 4 tablespoons olive oil
  • 1/2 cup chopped cilantro and salt and pepper to taste.
