Next time you’re digging around for inspiration get a couple of bottles of good wine, sit round the table with some good food, and have a brainstorming session with friends. That’s what owners Simon and Danielle Nicolaou did with their chefs while formulating the menu at The Vault Gastropub in Whitby. “Its’ all been good timing,” says Simon. “Danielle and I had been wanting to open a restaurant since we first met back in 2003. When the space for our gastropub became available in 2014, we jumped at it. We didn’t want to have any regrets.”
Simon grew up in the restaurant trade while Danielle was experienced at front of the house management in the restaurant industry. With their combined skills and experience, they make a perfect team at The Vault Gastropub.
